While Kousika managed food preparation alongside her professional commitments, Amit — a former banking professional with nearly a decade of financial experience — focused on operations, platform management, advertising, and financial discipline.

A defining moment arrived when Amit personally called the brand’s first 100 customers for feedback. The response was overwhelmingly positive, confirming that the product quality, consistency, and customer experience had created genuine market loyalty.

Instead of pursuing reckless expansion, AADIJAY® adopted a disciplined, data-driven growth strategy. The company scaled through cloud kitchens — a model chosen for its lower operational costs, faster breakeven cycles, and replicable systems. Every outlet was evaluated for profitability, demand, competition, and operational feasibility before expansion decisions were made.

From Bharuch, the brand expanded into key Gujarat markets including Ahmedabad, Surat, and Vadodara, gradually diversifying into cafés, restaurants, and hotel properties alongside its cloud kitchen network.

The journey was not without challenges. Rapid scaling brought operational complexity and significant financial pressure. Yet the founders maintained strict financial discipline — a principle Amit credits to his years spent inside India’s banking system, where he closely studied why businesses succeed or collapse.

Today, AADIJAY® holds significant aggregator market share in Bharuch and continues to expand under a family-led leadership structure that includes Amit, Kousika, and Amit’s mother Sunita Mohapatra.
